Food Deserts Part #3 Start Small

Start Small Herbs and Spices

Okay, let's say you don't have a yard, deck, porch, patio or steps. Unless you live in a cave you probably have at least one window. You can grow a tremendous amount of herbs year round in a few window boxes. Many of the herbs will grow back so feel free to snip away.

Did you know

About 20 percent of all apples, oranges, lettuce and other fresh fruits and vegetables must be thrown away before even reaching shelves, according to Daily Finance. As a result, produce markups average 50 to 75 percent.

Why overpay for something that is so easy to grow and convenient.

Take a look at the prices of the herbs and spices on the left. Now, look at the photo on the right. I planted these on Earth Day. The markers were $1.50 (for 30), the pot cost $1.00 and I bought four packs of seeds for one dollar. For the price of two packs of store-bought herbs, I was able to purchase enough seeds and growing materials to last an entire summer. Lets' not forget about all of those plastic containers that will end up in the landfill.  Then there is the freshness factor. You can't get any fresher than your windowsill.

Herbs are not the only thing you can grow indoors. Yes, it will cost you a few dollars for the initial setup but having fresh greens straight from your basement all winter is healthier and far less expensive.

Coming to a supermarket near you

Leading Dutch supermarket Albert Heijn has created the Help Yourself herb garden for the ultimate in freshness, allowing customers to take just what they need.

Someone will have to tend to this supermarket garden which means prices are probably going higher and since the best herbs will probably go first your selection will not be that great.

Don't forget that you can freeze some of your produce for later. Here are three bags of spinach I harvested from my greenhouse in January. Remember to use freezer bags if you intend to store your vegetables or herbs for an extended period of time.
